Are you looking for a delicious and healthy pancake recipe? Look no further! This recipe combines the goodness of oats, eggs, and bananas to create a nutritious and satisfying breakfast option. Packed with fiber, protein, and essential nutrients, these pancakes are not only good for you but also incredibly tasty. Let's get started!

Ingredients

  • 1 cup rolled oats

  • 2 ripe bananas, mashed

  • 2 large eggs

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon (optional)

  • 1/4 teaspoon vanilla extract (optional)

  • Pinch of salt

  • Coconut oil or cooking spray for greasing

Instructions

  1. In a blender or food processor, grind the oats until they resemble a fine flour-like consistency.

  2. In a mixing bowl, combine the oat flour, mashed bananas, eggs, baking powder, cinnamon (if using), vanilla extract (if using), and a pinch of salt. Mix well until all the ingredients are fully incorporated.

  3. Allow the batter to rest for about 5 minutes. This will help the oats absorb the moisture and thicken the batter.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil or cooking spray.

  5. Spoon about 1/4 cup of the pancake batter onto the skillet for each pancake. Use the back of the spoon to spread the batter into a circular shape.

  6. Cook the pancakes for about 2-3 minutes on each side, or until golden brown. Flip them carefully using a spatula.

  7. Once cooked, transfer the pancakes to a plate and repeat the process with the remaining batter.

  8. Serve the pancakes warm with your favorite toppings such as fresh fruits, Greek yogurt, honey, or maple syrup.

Additional Tips

- For added texture and flavor, you can mix in some chopped nuts, raisins, or dark chocolate chips into the batter.

- If you prefer a sweeter taste, you can add a teaspoon of honey or a natural sweetener of your choice to the batter.

- These pancakes can be enjoyed as a healthy breakfast or a post-workout snack. They are also great for meal prepping and can be stored in the refrigerator for a few days.
